Problem with spelt-buckwheat bread

I’d like to have some great new recipe to offer, but instead I come with a problem that I hope an experienced breadmaker may be able to help me with. I received the “My Way of Cooking” book when I hosted a demonstration, and from my point of view, the best recipe in it is on Page 236 – “Spelt-buckwheat bread”. I have made it about a dozen times now and it tastes divine. However, I get a big hole right through the loaf about an inch down from the top, so putting spreads on the slices is a delicate job. I wonder if there’s anyone in the community who would know what the problem is. I just follow the recipe as it says. I tried puncturing the bread after it had risen the other day. The level went down and I thought it was going to be OK but slicing it revealed the hole again – just not quite as big.
